Paximadia – Greek-Style Biscotti
A Very Kruzy Paxi
Kruzy – slang for Kreousa our Great Grandmother, Aunty & Nice’s wonderful name. One thing about these Kreousa’s is they know how to cook – they’ve just got the trick of the trade. They can make something out of nothing!
To make the perfect Paximadi (Paxi) you need….
Ingredients
- 1 cup of brown sugar
- 1 cup of orange juice
- 1 cup and a half of olive oil
- 2 and a half cups of self-raising flour
- Sprinkle of cinnamon
- Chopped dates (optional)
- Sesame seeds on top (optional)
Method
- Add sugar and oil slowly and mix with your spoon for 5 minutes. Sift flour add the orange juice and then the nuts. The dough may seem sticky, but is ok when you start working with it. Also refrigerating the dough for a while will help you in handling it.
- Adjust with flour and juice until you can form 2-3 ‘logs’, divide the dough into portions.
- Place on baking sheets or if you have small bread pans, you can put each loaf in a bread pan.
- Beat egg brush top of loaves. Flatten all ‘logs’ slightly and score
- Bake in the oven at 180 degrees C fan forced until they are nice and golden
- Remove from oven; while still warm cut loaves into 1/2 inch thick slices. Turn slices on their sides, on the baking paper, return to oven and bake these slices for around 10 – 15 minutes (depending on how crisp you like them), turn paximathia over, and bake for another 10 – 15 minutes.
- Let them cool on your TWK Board &
