It’s 2021, we need to make friends with salad, even if we don’t always feel like it satisfies us girls and boys who gotta eat, lucky for you, you’ve clicked on the right salad to both satisfy your hunger and give you a taste sensation. We give you the The Wooden Koutali’s Horiaitki Salata.
A little tip, it’s all about getting the produce ripe, right and ready! Spend the extra couple of dollars on a good Greek feta, get the deli olives and your salad will thank you later.
This salad is the perfect addition to any meal or is a healthy, filling meal of its own. We sometimes like to add tuna, chicken, beef or chickpea’s to fill us up even more and get our protein in.
Like any good house hold favourite, everyone has their own tricks, all hail…The Wooden Koutali’s Pastitsio. We are messy cooks, we don’t tend to measure, we free pour, taste and make sure it looks, feels and smells right. The beauty of cooking is that you can usually fix something by adding water, flower, salt, pepper, sometimes even a sprinkle of sugar.
Get ready for a crowd pleaser and a half…whether you don’t know what to cook for the kids and their 10 friends, want to impress the in-laws or even want to treat yo-self, give our pastitsio a go, and just remember if at first you don’t succeed, we are only an email or dm away!
Ingredients
- The Must have’s:
- 3 ripe tomatoes
- 1 large cucumber
- 1 red onion
- Salt
- Dried oregano
- Black, Green or Kalamata olives
- 180g feta cheese
- Olive oil
- Vinegar
- The TWK variants (do it):
- 1 capsicum (any colour)
- 4-5 small radish
- Pepper
- Fresh orgeno
- Lemon or lime
Method
- Wash all fresh ingredients
- Cut tomatoes into wedges
- Cut capsium into slices
- Peel and slice cucumber and onion
- Arrange the bowl like @thewoodenkoutali would
- Sprinkle with salt, pepper and oregano to taste
- Add olives and feta cheese on top
- Give your masterpiece a good mix through with your Salata Serves, if you will!
- Pour a generous amount of olive oil and a dash of vinegar or lemon/lime
- Serve with fresh bread and butter or as a side to a much, much larger meal
